Yippee!!! It’s almost Thanksgiving week!  We’re getting some fantastic fall produce in our Greenling box this week, and I am so excited to make savory comfort food for dinners leading up to the big day.  You’ll see that I’m making recipes that feed 6-8 people some nights and planning to eat leftovers other nights this week. I usually don’t have leftovers more than once a week, but my Turkey day strategy is to prep for Thanksgiving on leftover nights.

Sometimes people ask me if I actually use these meal plans to plan my cooking; the answer is yes, I am lost without them! For my own sanity, I have marked in italics the items I need to prep each day.  My complete, all local & from scratch Turkey Day menu is here, but I’ve included links to all the recipes below, too, for convenience.

Here’s what’s in the Local Box:

  • Fuji or Cameo Apples – Apple Country
  • Butternut Squash- Gundermann Farms
  • Persimmons – Acadian
  • Assorted Peppers – Lundgren
  • Cilantro – Acadian
  • Limes – G&S
  • Sweet Corn – J&B
  • Oriental Turnips – Acadian

Here’s what I’m making & prepping:

Wednesday: Apple Persimmon Compote over baked sweet potatoes with sour cream
Thursday: Apple Persimmon Compote with cheddar cheese in quesadillas
Friday: Roasted Beet & Goat Cheese Pizza, subbing turnip greens for beet greens in that recipe
Saturday: Vegan Red Lentil & Butternut Squash SoupcornbreadMake an extra recipe of cornbread for stuffing & freeze
Sunday: Leftovers. Roast & puree butternut squash for bundt cake and rumbo squash for squash pudding
Monday: Leftovers. Make a loaf of white bread for stuffing
Tuesday: Southwestern roasted corn salad, persimmon slices, leftover cornbread. Make Rosemary Pesto Rolls
Wednesday: Leftover corn salad with cheddar cheese in a quesadilla. Chop & prepare ingredients for roasted sweet potatoes & onions. Make Rumbo Squash pudding. Make butternut squash bundt cake with cinnamon glaze.

If I can stick to this schedule, I should only be left with a manageable list of cooking for Thursday morning.  I’ll check back in next Wednesday with the Big Day Battle Plan.
