Exciting news! Today one of my recipes was featured on Foodpress.com.  If you head over to the site, you’ll see my roasted beet and goat cheese pizza on the front page, along with a link to my blog.

Tonight I spent a few hours making pies for the various potlucks I have going on tomorrow.  First I made two sweet potato pies, just like the one I blogged earlier this week. I experimented a bit with the fillings, though. In one pie I substituted 1 tbs. rum for the lemon juice and vanilla in the original recipe. In the other I substituted 1 teaspoon almond extract for the lemon juice and omitted the ginger.  Both of the raw fillings were out of this world, and I’ll report back on the finished product after I try them at the potlucks tomorrow!

For the potlucks I also made apple persimmon tarts. I’m struggling with what to name the recipe since they’re more like mini pies (tassies?) than tarts.  However, mini pie is somewhat awkward to say.  Anyways, they turned out delicious and cute and very Thanksgiving, with the leaf shaped top crust and autumn colors peeking out from the filling.

Lucky for me my friend Nathan stopped by the apartment to practice using the macro lens he got for a wedding this weekend.  I’ll blog the complete pie recipe tomorrow, but in the meantime I leave you with this lovely food porn Nathan shot.
